The Quest for Pie Continues... 52 Weeks of Pie

Week 42: Apple Chile Pie




  • 2 pastry crusts
  • 5 granny smith apples
  • 1 C sugar
  • 3 T flour
  • 1 T cinnamon
  • 1 t nutmeg
  • 2, 3 1/2 oz cans of green chiles (hot or mild according to your taste)


  • Preheat the oven to 425 degrees.
  • Place one pastry crust in a deep 9 inch pie plate. Refrigerate.
  • Peel and slice the apples into 1/4 inch thick pieces. Add sugar, flour, cinnamon, nutmeg and chiles to apples in a large mixing bowl. Toss until thoroughly mixed. Spread the filling evenly in the chilled pie crust. Carefully place the top crust over the pie, crimpimg the edges. Use a sharp knife to cut several thin slices in the top crust.
  • Bake at 425 degrees for 15 minutes. Reduce heat to 400 degrees, cover the edge of the pie with foil or an aluminum crust protector to prevent burning, and bake for an addiitonal 40 to 45 minutes, or until the crust is golden brown.
  • Remove pie and cool on a wire rack. Serve at room temperature.
